Welcome to my open door cooking experiences!
In HANDMADE ORECCHIETTE PASTA WITH SAUSAGE AND CHARD we experience Puglia's Orecchiette pasta, a Southern Italian staple. Here we treat our pasta with what's known as a "dry sauce", where the body comes together with fat rendered from sausage along with extra virgin olive oil. This kind of sauce layered with lots of garlic makes it equally as substantial as the other classic southern meat stewed red sauces.

While the class is not technically heavy, it requires focussed attention and we will be moving at a cook along speed while also paying good attention to walking through steps.
